Why do Axolotls (mexican walking fish) in pet shops have no gills?

I have 1 axolotl already and i bought it from the pet shop it had many gills and frills and still does. im looking to buy another one and all of them seem to have hardly any or none compared to mine. does this mean they are sick or what?
